How to make traditional chocolate truffles
Makes around 15 truffles
75ml %35 cream
400g dark chocolate make, smash the chocolate into small pieces
25g butter
Cocoa, to dust
Put pieces of chocolate in a bow.
Cut the butter into small dice.
Heat the cream over a gentle heat until it comes to the boil.
Add the butter into cream.
Let to simmer for a minute, then remove from the heat.
Pour the cream and butter mixture on to the chocolate and leave for a couple of minutes, then stir until smooth and glossy, allow to cool, then cover and refrigerate about 2 hours, until set.
Use a teaspoon to scoop out truffles, then roll them by your hands into balls.
Roll truffles in cocoa powder.
